    What is the resolution for the EPS image? Does it take as long to save if you remove the image? Perhaps you could work with a JPEG version during the work flow and replace it once you are done? What are you saving as?

    In Photoshop CS, you can stitich images together by going to File> Automate> Photomerge…

    If that doesn’t exsist then the next best thing is placing the images side by side with the top slightly over the lower one, then put a mask layer with a black gradient that blends the images together.
