First thing you need to do is to read the manual and the FAQ on the companies website.
More then anything else you need to read the entire manual before you take this on a shoot. There are several things you can do that will screw you big time. It needs to be setting and used strictly by the book. After spending some time post specific questions on things you cannot figure out.

If you click on Video settings you will see that Compressor>Interlaced is probably check, this will give you interlaced footage when you are done. So you took interlaced footage and deinterlaced it only to put the interlace back into it. You will see that this is the difference between the for Interlace and for Progressive. The “FOR”… is for the resulting file and not the source.

It is very important, I always do this. -31 turns this off so there is no effect on your audio. I also always set the Compression Preset to NONE, this is in PreProcessing tab.

You can print to tape but you probably not be able to Edit to Tape. They are much slower in shuttling back and forth but they work, if you are doing a lot of mastering you may want to look for a good used deck.

What are you looking for?
You need a new/used camera or deck. No way around that. If you get a Digital 8 that can playback Hi8 tapes it should have Firewire so you can just use it to capture to your system, then edit and encode for DVD.
Or you can get a DVD-Recorder and play the camera to the recorder to do straight to DVD.

You on a PC, Mac, willing to spend serious $$, or do you have a budget.
The best are workstations that cost over $50K.
But quality of your encode will depend more on the quality of your video. If you are using DV cameras your encode will never look as good as well shoot DBeta or HD.

You can record RT to H264 in QuickTime Pro, but then you cannot edit it. There are a couple of devices that help with encoding process to make it a lot faster. There is a video podcast on the cow on one of these devices.

Have was your program color corrected? The player maybe enhancing green that is at a higher level in your video vs. the hollywood titles, which are professionally color corrected. Also did you try more than one player?
If you are concerned about this you have to set up a QC process that has PAL players and TVs.

I have a Behringer XENYX 802 Mixer, (2) mic pre amps plus (2) stereo 1/4 inputs. Sells for about $60.
Go to some place like guitar center so you can swop out something if you don’t like it.

[Harrison Reinisch] “dirt flying” Don’t have any time with the canon but I think motion and especially something like dirt being kicked up is something that can break down pretty fast with any HDV camera. The long GOP compression just doesn’t like fast/small changes frame to frame.
