Record your audio on the Zoom H4N audio recorder or similar.
I treat the 7d like an MOS camera.
Just time your start and stop times every ten minutes or so, and let the audio recorder run continuously.
You can then cover any breaks with Broll.

Besides the Zacuto, which I do use and love, you should check out the Cinetech Hipcam rig, which has a rod with a spring that attaches to a heavy belt around your waist, taking most of the weight off of your arms:

I am a huge Nikon guy, but for video, RIGHT NOW, Canon is king of the castle, hands down.

You are limited to 5 minutes of recording time in HD mode, and 20 minutes in lower resolution modes.
If you want QUALITY audio, then record with a separate audio recorder.
The DSLRs should be treated as MOS cameras, IMO.
