Actually you need MPEG2 for DVD and either MPEG2 or AVCHD for Blue-ray.
Try using the MainConcept MPEG2 format with one of the DVD Architect templates for DVD burning, and the Sony AVC format with an AVCHD template for Blue-ray.

Vegas Pro prior to version 14 uses QuickTime for Windows to play back MOV files which is a 32-bit component that limits your available memory to 2GB so after you place a few MOV files into your project it runs out of memory even though your computer has more. It sounds like thus may be happening to you.
The solution is not not use MOV files. Convert them to MP4 or something that Vegas Pro can edit natively.

A new Mac Mini can produce much higher resolution that an old Apple Cinema Display 30″ so the question is not if the display will be fully utilized but will the Mac Mini be fully utilized. ????
The Apple Cinema Display 30″ is capable of 2560×1600 and the Mac Mini can support up to 4096×2160 so yes, your Cinema Display will be fully utilized. You will need to purchase a Mini DisplayPort to DVI Adapter because the Mac Mini has newer Mini DisplayPort connections and your Cinema Display has older DVI connections.
You might also want to consider purchasing a used 2010 Mac Pro (that’s what I have). It still runs the latest macOS Sierra and you can probably reuse all of the hard drives and such from your old Mac Pro. OWC has a nice selection of refurbished Mac Pro’s to choose from (they have 12-Core Mac Pro’s starting at $1,799 USD) or you can find one on eBay relatively cheap. You can even get a 2009 Mac Pro 4-Core for $529 which is what you would pay for a Mac Mini 2-Core! Just something to consider.

Matt, Where are you finding this? There is no Effects menu at the top of FCP X. What is your starting point to find this menu? I searched the Preferences and there is no Effects tab there either. I had no idea the FCP X has an RMS meter but I’m curious to find it. ????

It looks like they may be using a mask because only the hand gestures are doubled. Look at the groom’s face… it is crystal clear. So they are superimposing only part of the video which I assume is accomplished by masking out the rest. It sure looks to me like it’s just zoomed with opacity lowered to almost nothing or perhaps composited with screen mode. It’s definitely not a full frame overlay.
Don’t forget that it might look a certain way because of the “content” of the video. The white cuff will composite very differently than a darker color would so your video might not achieve the same result because of the luminance of the content.

Actually, that’s not what I’m experiencing. It uses the project setting to determine if the INPUT is progressive or interlaced but the OUTPUT is always determined by the settings that you apply in Compressor. For example, if you select Apple Device for the output, it will never give you an option to render interlaced because all Apple Devices are progressive.

The setting is on the Video tab but it is always greyed out. The field order is determined by your target device and Compressor sets it accordingly. There is no reason to mess with this setting yourself.
You didn’t tell us what settings you are using in Compressor but I’m confused by the title of your post. It is almost impossible to NOT get progressive MP4 video from Compressor so I’m really curious as to what you are seeing that is so different from what I’m seeing.
Let’s start with what setting / preset are you using in Compressor that is giving you interlaced MP4 files?

The Mac is smart sensing where there is a display signal and dynamically switching to/from it. I don’t know if you can change this behavior. You might want to find a solution that feeds a steady HDMI signal to the Mac and switches somewhere else in the chain (unless someone else knows how to override this behavior).
