Encore is trying to transcode the audio to make it DVD-legal. However, it also re-transcodes the video when it does this.
So do try stripping it to elementary streams and let us know what happens.

Do your MPEG-2 files contain audio? If so, either strip the audio out and import separately, or export elementary streams from your encoder.

And the next thing to check is the duration of all your video.
A 1 GB video file could be highly compressed with a different codec than used on DVD – all DVD-Video discs must be encoded MPEG-2 for DVD to play back properly in a DVD player.

You want a video button, but don’t want it to link to your timeline? Then don’t use Encore’s button video thumbnail layers at all.
Instead, create a facsimile of it in AE or Premiere and use that as a video background for your menu, and link your button to where you want it to go. Since you don’t use a button video thumbnail layer, nothing will change when you link to a menu, since it’s all fixed in the video background layer for the menu.

No, Encore projects are platform-specific.
That said, if you install Boot Camp on the Mac with Windows XP/Vista and with Encore for Windows installed, you can of course open a Windows Encore project there.

This can’t be done with Encore, unless you are exporting the entire project to Flash.

Maybe try importing them as assets, then create a timeline and drop them in?
