There is no DPI or PPI in video. There are only pixels. For an NTSC DVD, that means there are 720 pixels in every row of the video frame, and 480 rows per frame.
The pixels are a different shape and size in a widescreen DVD than they are in a 4:3 DVD, but there are still only 720×480 pixels in the frame.
The number of pixels in a DVD video frame is the same whether you watch it on a 13″ portable TV or on a 70″ plasma screen. 720×480.
The terms DPI and PPI only have meaning in the print world, not in the video world.

You don’t need overrides to do what you want. Overrides will most likely cause you serious disc navigation problems.
For the menu buttons that you want to link to the same video but a different audio track, choose the Specify Link option from the Link drop-down list on the button’s Properties sheet. From the dialog that opens, you can choose any audio track that you want.
You can do this for any and all of your menu buttons. If I understand your setup correctly, that means you can probably cut the number of your Chapter Playlists in half.

WAV is good. You need to make sure that it is 48 KHz, 16-bit stereo.
You should also burn the project to an RW disc (no coasters) and test on both a hardware and software DVD player. This could be a preview-only issue, especially if your computer is close to the minimum specs required by Encore.
Until your RW test is complete, I wouldn’t change anything in your project.

What format is the source audio(WAV, MP3, AC3)? How is Encore set up to transcode the audio for the finished disc (PCM, AC3, MPEG)?

Anamorphic widescreen PAL video is not 1064×576. It is 720×576 with a PAR of 1.422.
Encore can transcode PCM audio to 2-channel .ac3. It can import and export already-transcoded 5.1 .ac3 files, but you cannot transcode 5.1 .ac3 audio from inside of Encore.
You can import several types of subtitle files into Encore from programs like Lemony and Subtitle Workshop.
Encore has no trouble authoring high-quality 16:9 Standard Definition DVDs. If you want HD-DVD and/or Blu-Ray authoring solutions, then you must look elsewhere. Sonic Scenarist can do HD-DVD and/or BR if you purchase enough of its various components. Expect a really hefty price tag.

Was it transcoded originally with ProCoder? If so, try re-transcoding as Field-based instead of Frame-based. Let us know what happens.

#2: C’est possible quelquefois avec plus de sous-titres. Create your subtitles in a separate program like “Lemony” (chere) or “Subtitle Workshop” (gratuit) or “Notepad” (Plus de travail). Import the subtitles into Encore.

When you set the end action for each timeline, you can not only choose the menu to go to, but also the button. It’s not hard at all.
