The best advice I can give you is to test, test, test. Find a friend with a different brand of DVD player. Download and test some software DVD players. Go to your local electronics retail chain store and test the disc in several of their players, maybe buying another one so that you can test future projects on multiple players (I have 7 that I use for testing).
I think it’s a safe bet that if you can get the burned disc to play correctly every time on at least one player, then it should be OK to use as a master.
Make sure to order a test disc from the replication facility so that you can test that before they make the pressing run.

Possibly.
Some replication facilities can use a DVD+R DL disc as a master, some insist on separate discs per layer, some insist on -R DL discs and some insist on DLT masters.
All replication facilities should accept a DLT master.

Go to the Basic tab in the menu’s property sheet in the Properties panel. You should see controls for both End Action and Override. End Action for a menu defaults to Stop and the Override defaults to “Not Set”.

Preview is at best an approximation of a finished disc. To fully test the functionality of your finished DVD, you should burn to an RW disc (no coasters) and test on a variety of software and hardware DVD players. Many DVD players have different features and different names for the same features, and so may react differently to the same disc.

Memorex brands discs from different manufacturers and almost always gets the cheapest discs. You can even get discs from different manufacturers in the same spindle. So part of the spindle will do just fine, and another part won’t.
Since it’s hard for any DVD player to read a burned disc because the reflectivity is so low, and since it’s harder still for DVD players to read dual-layer burned discs, it makes since to use the highest quality media available.
Older players will have a harder time with burned discs than newer players, and cheaper players will have more trouble than expensive players.
Unless you send your project off to a replication facility that will create pressed discs instead of burned discs, the best you can expect is about 80% – 90% compatibility with existing DVD players, even with the best media.

If you plan on using a video asset as a menu BG, then it shouldn’t be put in a timeline. Just Alt+Drag the asset to the menu when the menu is active in the Menu Viewer.
What version of Encore are you using?

It sounds like you have the end action of the menu set to Stop (which is OK), and you have set the Override (which is not). Delete what you have set in the Override control of the menu. AAMOF, delete all overrides that you have set in your project.
Overrides are special navigation tools, and unless you know exactly why you need one to set non-standard navigation in your project, you should always leave them “Not Set”.

My first guess is the brand of your blank media. Memorex is an awful brand of media. Stay far, far away from Memorex.
Better brands: Taiyo Yuden, Verbatim, Maxell, TDK. TY and Verbatim are the best, Maxell and TDK slightly behind. I don’t know if all the brands I listed have DVD+R DL blank media available.

If I understand your previous posts correctly, the most important feature of your project, and the one that would be hardest to recreate, is your menu(s).
I suggest you add the menu to your Library and then start your project over. Don’t delete the old project until you know that you’ve got everything you need from it. You’ll be able to add the menu back to the new project from the Library.
I don’t know exactly what’s causing the transcoding error, but it’s a sure bet something got messed up when you canceled the build.
