24 or 30 is personal preference. Both work. I’ve done steadicam with both frame rates with good results. I don’t use much slowmo effects anymore. If you shoot it right it’ll all just flow together without using to much effects in post.
With experience you will shoot better. I shoot to edit. I don’t waste a lot of time getting the same shot over and over. I try and nail it the first time and move on. I don’t waste time shooting something I know will not be in the final edit. I usually have a song picked out for the highlight reel and that drives my shooting style for each event.
The film crap mentioned above is my style. There are limitations in certain locations, but you can get these shots before or after the ceremony. I only get 3 or 4 steadicam / glidecam shots and I’m done, because I know I don’t want more than that in my final edit.
I use a slider on the floor during the ceremony, hidden at my feet while shooting on a tripod. I will sneek it out into the isle when nobody is looking and grab a few shots. It’s not distracting and gives you another point of view.
I have shot 4 camera weddings with a crane, steadicam, slider, etc. If you know how to set this up behind people or balcony’s, etc., you can pull it off with little or no distractions to the ceremony. This comes with experience.
Of course, I only go to such extremes for high paying clients.

I’ve done both. But the zoom on the shoe isn’t that awkward. Patch the audio out in to your camera so you have audio in the zoom and the camera.
I also have a shoe splitter, which is top heavy to mount a light and audio / wireless when needed. This setup is on a tripod, so it doesn’t really matter being top heavy.
Rode has a quality small shotgun mic. It all depends what type of audio you are trying to get.

The $400 question. B & H gave you the best lens for the money and choice. If you are filming some night shots by the camp fire, it will be awesome. If you only shoot in the daytime, then go with the other lens. Otherwise, your cheaper zoom lenses will not give you very good images shooting at night.
If you had the budget, I’d recommend the 24 – 70 F2.8 L Series lenses. But they’ll set you back around $1,400. You get what you pay for.

Do you want a video camera, or a DSLR that shoots video. When you say manual controls, then do you mean control over audio levels, video settings, etc.? If so, you will need to switch to a video camera.
Unfortunately, at that price, you’ll run into issues in low light. You can find many cameras for that price, but most only have one sensor.
You can shoot great video with the canon 7d and buy and external recorder such as the zoom. Either way, you’ll have to sacrafice something at that price level.
Go to B & H and start looking at cameras in your price range. The CMOS in the lower priced cameras get noisy in low light.

The cost is not for downloading and installing the upgrade yourself. It’s for shipping your camera to Sony and having their tech’s install it.
I paid $180 to have it done, because I didn’t have the time and wanted a Techie to do it as well as cover a camera crash if it happened.

Hoodman is the distributor for the SxS adapter. They just slapped their sticker on it. It works perfectly.

The camera ships flat. If you have vortex media’s DVD, he gives you some user profile presets. You can also find a lot of user profiles online and some in camera.
It’s best to shoot one scene multiple times with each profile so you can see the difference and be educated as to which one works best for your shooting location.

You’ll have problems with the old firmware. You need to update your camera. Make sure you update to the next version, never jump versions when updating, it could trash your camera. Do your homework on how to update.
The new version solved many problems with using the SxS adaptors. I personally had 2 cards wiped out by the dreaded “restore media” with the old version. Once I upgraded, I haven’t had a problem since.
