Time to upgrade. At least go out and purchase Premier Elements. Cheap alternative that will let you edit without all the headaches. How much is your time worth?

Any NLE will work equally. It’s all about how comfortable you are with the editing software. You can even edit with Adobe Premier Elements.
I use Final Cut and Adobe Premier CS5. The new final cut does nothing to improve or enhance my ability to deliver a quality product.
I do know that the Premier CS5 / 5.5 and the Creative Suites works well together as a software package. I can open my premier project directly into after effects, then it will update in Premier. I can set up my DVD/BluRay in Encore, open it up in Photoshop, and then back to Encore with no issues. This speeds up my workflow and time. But, you only mentioned editing.
Transcoding can take forever on the Mac unless you are running Premier CS5 / 5.5. Using the Adobe Media encoder is really fast. I can transcode my videos for Vimeo or YouTube using presets that take minutes instead of hours for a 3-5 minute highlight reel.
Again as editing software, you won’t benefit from any particular software. But as an overall suite to take your editing project to delivery, you have to also consider all steps involved and not only just the editing process.

I would never use the camera for a playback device. If you have a few hours before going live, why not use import to your computer and play back on your computer? Or, transcode to appropriate codec for playback?

Personally, I’ve been recommending to everyone who will listen, to purchase the Panasonic AF 100. A hybrid of the DSLR and cinema quality cameras.
It’s nice to have a DSLR if you’re both a still photographer that does video. But you are the opposite with video being your primary business. If you have the budget, buy the AF 100 and a Canon 60D or 7D for the Stills. Of course the 5D MK II full sensor does have better detail in it’s video and images.

It’s never going to be better than the original recording. Log and transfer works great, unless you bought Final Cut X.
You can also record to an external recorder at 4:2:2 for better color correction in post. This will give you the best image possible from the camera.

I just had a client ask me to record 3 days of slides with audio so they would have a reference. This is a waste of space and time.
I choose to have the speaker in frame (when possible) with the slide in the background, so I can reference it for later insertion of the slides. I also get a copy of the powerpoint from teh client.

That’s why I usually transfer files of this size right before going to bed. It’ll be done in the morning and I’ll be ready to edit.

It may depend on the version of Final Cut you are using. I hear the newer version of Final Cut do not support Log and Transfer. Therefore you would need to transcode your files to ProRes.
Otherwise, file and transfer converts your file to an editable format. No need to transcode.
