There is a fluorescent setting in the camera white balance settings that may help. I had a recent issue with fluorescent lighting and it helps. Not sure what to do in post.

Using a wider lens, 24 mm or below, sometimes gives you a little fishy look and can make a clients face look fat. It’s better to stay above 50mm for interviews.
I would go below 2.8 for interviews. If you shoot at 1.2, the bokeh is too much. It’s better to be able to see some of the background to place them at the location and allow your viewer to actually make out the shapes and objects…..even though they are slightly blurred with the shallow depth of field.
Many people think that the lower the aperture….1.2 for example….the better. Sometimes it is, but only if you don’t want to reveal what is in the room or location. Lenses tell stories. Some project different emotion. Some can detract from your purpose.

This is corporate work. Charge an hourly shooting and editing rate. It is the only way to get a true payment for your time. If you just quote a one stop rate, you may end up working 40 hours but only get paid for half.
$50 – $75 per hr. is a fair rate….more if you can get it.

Final Cut does a really good job of smoothing shaky footage with the “Smooth Cam” plugin.

Anytime there is a change in the light, clouds, indoor, outdoor, there will be variations in exposure and color. It doesn’t matter what camera you have.
Since you didn’t mention a budget, there are a bunch of choices that will do the job.
As DSLR’s go, the Canon 5D Mk III is amazing. The full sensor of the Mk II or Mk III does make a difference in color and depth of colors, giving you more details in your final images.
The 7D and 60D are also good cameras, but do not give you as much color information.
The Mk III is amazing in low light with very little noise. It’s also great for interviews. You should capture your audio separately in a field recorder for the best quality. Here is a test shoot with the Mk III. https://vimeo.com/38897047
