I don’t know how it works with Apple related authoring software!
In Scenarist & Spruce Maestro is a way to create a DATA folder on disc parallel to the AUDIO_TS & VIDEO_TS folder!
If you don’t need to apply CSS protection you can use any CD/DVD image software to create a new folder on your DVD image with any DATA content!Andreas Gumm

Have you tested the issue with a different hardware player / player software?
You can test also with ‘Subedit 1.51’ if your DVD programm stream contains correct subtitle streams. Please take a look on how the subtitles has been flagged: LB, WS or both?
https://www.videohelp.com/tools/DVDSubEditDVD needs a correctly flagged subtitle stream for each of the used aspect ratios.
For 4×3 program you need just a letterbox stream.
For 16×9 you need an additional widescreen stream or just a standard stream flagged for both aspect ratios!Additionally test your hardware player configuration!
If your player setup doesn’t match your TV’s aspect ratio your player maybe fail by playing the false subpicture stream!Since I don’t use DVD Architect I have no idea how it works inside.
But by adapting my suggestions there should be a way for success!Andreas Gumm

Don’t apply any global DRC profile to AC3 streams.
This will keep you awayy from such issues!Andreas Gumm

Button creation (button = subpicture for highlighting) is hardly limited by the DVD spec!
You can use a maximum of 4 colors to create a valid subpicture stream for button indication!
Normaly one color is set to 100% transparency. The other colors are set for outline, background & (pseudo-)antialising!
Images are improper for the usage as button highlights! All other graphical ‘buttons’ with more complexity are realized with with the background image or video clip!Andreas Gumm

I don’t know exactly what you want to do!
A modern NLE system is able to edit whith MPEG2 & AC3/PCM streams directly in your timeline. There is no need to convert it to a lossless AVI format before.
Some NLE systems (for example Grass Valley EDIUS 6) are able to import such contents directly from disc (without CSS decryption), but in some cases it’s really better if you demux the content to HDD & drag it to the timeline.
Then do your editing steps. For demuxing use PGCdemux, it’s fast & reliable!

Open the files in Quicktime for Windows & save these with new file names.
Now try to import the created files in Sony Architect! If this won’t work try other tools to remux the MP4 files or just create lossless AVI files with Virtualdub with ffmpeg import plugin.
(can suggest you encoding with HFYU, because the codec is readable by PERIAN on mac too)I hope it helps!
