Norman,
The Mark iii can only shoot 29:59. It’s a EU regulation or they have to call it a camcorder and a tax issue.
The Mark iii does shoot clean out through the HDMI port, so you can in theory go into live view and shoot forever into a third party recorder, say a Atmos or AJA product. You just have to set the camera to never sleep or what ever Canon calls the auto sleep mode, I forget.
If you want to shoot RAW with Magic Lantern, the results are spectacular at 14 bit and loads of latitude, but you can only shoot to fast CF cards and are again limited to 29:59.

If you don’t need the latest greatest, it a great camera. You can even download Magic Lantern and shoot RAW (albeit only 12 minutes takes max).
If you are planning to stay with Canon, keep the glass. Though if you do go with another company, there are quite a few EF adapters so, good glass is good glass. Would I jump to a Canon 5D mark iii? I’d probably wait to see what Canon announces in September. Everything seems to be going 4K. It’s a buzz word and 1920×1080 is still fine, but if you need to reposition a shot in post, 4K has more head room.

You take the Cinema DNG files into Davinci Resolve or After Effects and render out the sequence into something Vegas can read.

I don’t use Vegas as I’m on a Mac, but my workflow is convert the Magic Lantern Raw to CinemaDNG, them open as an image sequence using Camera Raw plugin in After Effects, grade to my liking, save to ProRes QT file and then edit.
You can always relink to originals for a proper grading in Davinci Resolve.

Can you copy the file off the CF card?

Are you editing with FCP 7 or FCPX? FCP 7 is best to convert most modern camera codecs to ProRes. I recommend the same thing with FCPX but FCPX works with a lot more native codecs.
I really can’t recommend a camcorder at the $2000 price level as I don’t have enough experience in this price range. Most of the projects I do use more expensive cameras. Perhaps someone else can chime in.
I’d also recommend, depending where you live, to go to a pro store that has floor models you can try. Samy’s in California, B&H in NYC.

Sarah,
It all depends how much you are spending. Canon makes the XF-305 (https://www.bhphotovideo.com/bnh/controller/home?O=&sku=684198&gclid=CJCI_JyMib8CFUOSfgodPQwAxg&Q=&is=REG&A=details)
It’s not as big as a DSLR sensor and cost more than a 5D Mark iii. IT really comes down to what your needs are.

A DSLR is not better than a camcorder and a camcorder is not better than a DSLR. It all depends on your needs. If you are uncomfortable with technology, get a camcorder as it was built to shoot video and run and gun with built in mic, auto focus, etc.
DSLRs take a little more care to get good results. You do benefit from larger sensors and compact size, but is is not run and gun and they aren’t configured to record great sound right out of the box.
