Can you put them so the sun is at your back and they will be front lit. This is usually the best way to light. And try not to do it at Noon when the sun is directly overhead or you’ll just get some harsh shadows.

If you want the most out of a 5D Mark III you can install MagicLantern on an SD card and shoot 14bit RAW instead of h.264. It’s basically shooting RAW CinemaDNG. You can post process everything because it is RAW, white balance, exposure, etc. It is a specific work flow but the results are stunning.
If you are doing long takes and not doing a lot of camera moves, you can get a dummy battery from Canon that then plugs into AC power so you can shoot with no battery drain. Remember that the DSLRs from Canon can’t shoot longer takes than 29 minutes 29 seconds.

Use the export to web function and save as PNG 24. I do this all the time.

HD 1080 or less ProRes422. Over HD, say 2K or above ProRes422 HQ.

Are you looking at the footage out of both programs on a properly calibrated broadcast monitor? If you are only using internal program viewers, nothing will be accurate.

Al Bergstein is on to something.
Try resetting the camera to factory defaults. Heat is an issue if you have the camera sitting on the sun on a tripod. If you’re outside and that is the case shade the camera. Take a can of canned air and gently blow the contacts on the card and the CF bay on the camera. Make sure there is no dust or dirt.

Have you tried converting to sRGB? Also, try the export for web option and set it to PNG.
