If your source is 1280×720 and you want to make a DVD you will need to make it according to DVD specifications. So if you’re using a format that is specced to NTSC DV then it will be 720×480. There is no DVD format that is 1280×720.

If this would be the case then why are there options to save to an earlier version?

Because you’re opening an older project with a newer version. There’s probably some under the hood and compatibility stuff going on.

DNxHD/HR formats work with pretty much everything and not only Avid. Also not all applications can export Prores on Windows eg. Resolve.

AFAIK there’s no official VR hardware support on Macs in the first place so you would be spending money on a thing that will not even work.
