The output from your iMac to your consumer TV is a computer signal not a video signal.
They are different qualities as you can see.

You are limited to proper monitoring with your computer. Matrox, AJA, and Blackmagic do not have capture IO devices for the iMac.

The latest iMac does have a Thunderbolt Port which would allow you to use the Matrox MXO 2 products.

Use png’s instead of jpg (less compression). Use easy setup and choose ProRes as your sequence setting.

No need for 16:9, you are only stretching the photos.

Wikipedia can give you very detailed information on both AVCHD and DVCPro Codecs.

DVCPro is an Intra Frame codec. That means, each frame stands on its own. The computer does not have to make up frames to interpret the footage. That’s why it is easier to edit. ProRes is also an intra frame codec.

Codecs that are difficult to edit come in Long GOP form.

DVDSP is easier than iDVD. A quick look in the Help menu will give you step by step instructions.
All you have to do is drag and drop. Spend 15 minutes and learn it.

Compression has built in presets. Use them.
