I was suggesting keying to eliminate one colour from the petals layer. But keying is very different depending on what the background behind the petals looks like, so I don’t know exactly what would work best with the petals video.
Or do you mean that you want the petals to be invisible, and you want petal-shaped holes in the text? That will still be track matte, but with inverted settings from before.

Foam has some nice ways to control the way it flows. I don’t remember if you can apply different frames to the particles with Foam.

For your first question, you should learn about “track mattes.” For the second, learn about keying, or bluescreening.

This explains how to use displacement maps, which is a good way to distort the image.
But if the distortion is perfectly still, it won’t look quite like reall fast-forwarding. A good way to make it shake is to apply a wiggle() expression.

Put this in the expression for the opacity.
(wiggle(5,100)>75)*100
Change the numbers until you find something you like.

Maybe make two parts. One for the beam, one for the circle at the end. Parent the circle to the beam, rotate the beam, and orient the circle so it always faces the camera.

Make an image with black-to-white gradient that repeats three or four times. Apply a Levels filter with slight wiggle() expressions for all the values. Maybe also wiggle it up and down. Precomp that and use it as a displacement map.
