I have had the opposite reaction to ergonomics.
After owning a 5D2 which I consider Canon’s best HDSLR, I much prefer the Nikons.
You can shoot full manual with the D5100.
The controls are available after you are in live view.
However, I prefer the automatic settings for movies myself. -
I would expect the quad core to process faster, especially if the clock speed is faster.
However, your motherboard band width, amount and speed of memory are probably more important.
My 2x AMD has consistently beat my 4x Intel because of the motherboard and memory. -
Your video platform can not be too stable.
But, it usually needs to be mobile.
I have a big heavy monfrotto and full wimberly head that I used for HillClimbs with a 300-800 lens.The rig I like for video is the Slik U212 with 5310 movie head.
Very versatile and not so heavy. -
I have Vegas Movie Studio 9 Platinum Pro,
Movie Studio HD Suite 10 and Vegas Pro 10.Skip to the chase and go for Pro 10.
There is an announced update coming soon that will add even more functionality.
What I like best is that the whole thing is so well integrated that I can simply drop my media on the timeline and next burn a DVD. -

I had the Canon 5D2 (which I consider Canon’s best, especially for Video). It is probably way out of your price range.
I like the D7000 with 35mm f/1.8 lens better in every way, especially for fast action sports, but also Video.
It should be close to your budget. -

I have had a 5D2 and still think it is Canon’s best camera, especially for Video.
For my use, the Nikon D7000 beast it in every way.
Camera and 35mm f/1.8 lens $1400 + tax and shipping.
