This seems like a how-to-control-rolling-shutter for youR CAM more than a glidecam question – where the “best” frame rate will be the one that cuts into your sequence and looks haow you want it to fast, jerky, smooth … whatever suits the sequence.)

It might be well worth your while to take a close look at the GH2 / GH3 / GH4 family … the gh4 is pricier but the other two should be well within range of your budget, and apart from the 4K offer much of interest.

Good that the rolling shutter can be worked round.
With the sharpness issue, is that re stills or are you finding video not sharp. I’m guessing the Canon lens you know is good from mounting on other bodies … I guess there might be a canon-to-E mount adotper issue …?

I’ve worked on projects where the editing all takes place in a secure room on client premises with no internet access or other external connection, with usb drives disabled on the edit machines and with routine in and out searches of (carefully vetted) visiting crew. To an extent it depends om how sensitive the material really is.
