I use a tool called FontExpert to manage my fonts. It’s really easy to move fonts around and that way Photoshop doesn’t try and load everything at once.

Yes it can! You need compositing software like Combustion or After Effects to treat the footage using a technique called “rotoscoping” – which means keyframing a selection over the area that needs color and then adding an effect to that selection which will tint the B&W footage.
