One question, are those three arms (sticks) are always there or do they appear when navigating menu buttons?
Just by looking at it I believe the third arm and first arm (from the left side) of the snowman are causing the overlap with “Play Reel” and “Video Resume”. On the right side the third arm overlaps with “Individual Projects”. I am correct?
What I would do is make the hand shorter until I get them to not overlap with other layers, but this will change your design. Basically your snowman hand will be animated in different sizes depending on where is pointing. You can try that and see how it looks. If not, you could move the snowman to one side of the canvas (left or right) and put the text in vertical order on the opposite side. This way you will only need to use one side of the snowman arm to point to the menu buttons. Of course, this will completely change your design. Just giving you a few ideas to try.

You can look in Pond5. I search “POV hands” and got a few interesting results, but I believe not what you are looking for. This is an specific request so you will probably need a film team to do it for you. Good luck finding your footage.

FLV compress the video so much that it lose a lot of details. In Media Encoder you can use higher bitrate settings with VBR 2 Pass. The problem is the file size will be bigger, but it could fix the grainy of the text. If you are uploading to YouTube I strongly recommend exporting in H.264 using YouTube presets. I love H.264, is preserve the quality of the video and use less file size.

Like others mention, you are trying to market one of the most competitive (and overused) niche out there. Mike Cohen posted, What’s your business plan?. If you are going to make a product you need to have some kind of plan even before starting out. There is no such thing as getting rich quick by just having a good idea, all is in the hard work and proper planning. That being said here are my thoughts.
First of all your niche is very competitive and like others mention you need to have a target audience because is unlikely that you get mass appeal (unless you have millions of dollars). Second if you set up a website you need to make a massive internet marketing to be able to compete with literary millions of competitors. How do you do that?, by targeting your audience. You start locally from your hometown by targeting several websites (specially social networks) with people that could probably buy your product. You invited this people to your website and you GIVE THEM SOMETHING FREE. That LAW now when doing Internet marketing, you need to give something free and get their contact information so you can later follow up with them with more free stuff.
I could continue giving you other tips, but you need to figure it out on your own, researching what your competitors are doing (and not doing), know where is your target audience, how much they are willing to pay and so on. For video distribution I recommend a program called Traffic Geyser which publish your videos to multiple video sites and help you with Internet marketing. It includes hours of video tutorials explaining how to get your product out there which could be very useful for you right now. Rendering times depends on your computer power. My Macbook Pro 4GB RAM, Intel Core 2 Duo always takes longer than 5 hours to render videos that are longer than 30 minutes. Also, the more transitions and effects you add will make your rendering times twice longer. Is recommended to render your videos to your faster drive, in my case, I let the computer up all night rendering. Later I wake up with my video happily waiting for me.

I would use two different shapes, one being the snowman arm and the other for the items. Then I will organize them in different folders so in Encore the buttons move at the same time (arm and item). Of course this could work if you only have those two shapes, but if you have more buttons in your menu then this will probably not work. A screenshot will be nice.

If you are using text with pictures, you can export them in .JPEG, but if you want your text or picture to be transparent (alpha channel), then you can export it in .PNG.
