Trim paths with the simultaneous option checked will do that effect of each letter in the word being revealed at the same time. However, it’s not exactly a quick process. Look up trim paths and you’ll find tons of videos showing you how to use it.

Depending on the effect you are going for you can actually link the Focus Distance to a specific asset. So if you never want that object to go out of focus you would select the layer and the camera, right-click on the camera layer, select Camera… from the flyout menu, then select Link Focus Distance to Layer.
