I haven’t used that particular one, but yes, I find most handheld stabilizers become very heavy in only a few minutes and you wind up shooting the floor. If you plan to use one a lot, get the harness and go full steadicam (or glidecam in this case) – the amount you spend will quickly be made up by what you can shoot.

Then just export the footage and bring into FCP. I’ve made wedding videos and the like in iMovie many times – it’s drag n drop. I’m using iMovie 7.x (iMovie ’08?).

I didn’t see a similar one for Motion, but I think this could be adapted for Photoshop (CSx Extended) or Motion, too.

Honestly, there are dozens of books and websites on the topic. Try filmmakingstuff.com He’s got loads of links to other stuff on his site, too. It depends on what you need the business plan for – investors, other Filmmakers, yourself, your crew, etc. Let us know how it comes out.

You may want to look into some kind of capture box that will allow you to plug your camera feed directly, then convert to a compact or other format. Many times, these boxes will allow you to use just about any video/audio feed to make files for editing or for online/offline use. It depends on what you can spend or how far you want to go.
Check out the AJA forums, the FCP forum is good and I’m sure you’ll get a response here, too.

I’d say go with the 60D, get a decent zoom lens and some primes (many primes), get a whole bunch of 8 and 16 gb class 10 sd cards ( I have fewer overheat problems with class 10 vs class 6). Skip the on camera mic, but pick up the H4n, a set of good lavs won’t hurt and a good boom mic and pole are nice. I build most of my own equipment for camera rigs, but get a tripod that won’t break the bank.
The big question: what are you gonna shoot? That will drive the gear.

Also, have you tried downloading one of the more recent builds besides the “official release?” the newer ones also give the T2i a full ISO range like the 7D.
