In the very bottom left corner there is a button that looks like some files, it’s the “Expand or Collapse the Layer Switches” toggle. If you press that, it should restore your value box. If not right click in the area above your layer next to source name and you can choose “Columns -> Switches” to turn them back on.

You could “alt + click” on each property to create an expression and press enter to set the expression to it’s default. Then go to Animation -> Keyframe Assistant -> Convert Expression to Keyframes and that would generate an keyframe for every frame of your composition.

There is no hard and fast rule to this, it will depends on your project, style and design.
That being said, I generally use larger layers spaced out farther, it’s always easier to make a layer smaller than larger. I find it’s easier to move a camera if I have larger layers, can space things farther apart and create long smoother moves. You can make those moves with smaller layers, but with everything packed close together I find it more difficult(I like to create the illusion of parallax and to do that with everything right next to each other is more challenging). Check out this tutorial from VideoCopilot to see some nice moves and parallax.
Of course you can only work with what you have and if a client provides you with small layers, that’s what you got to use.

Are you rendering to Best quality, cause you would need to render the graphic at “Current”
Another way to do it would be to just add a mosaic effect to your graphic and set the blocks to 1/2 to 1/4 of your current resolution.

Toggle the quality switch to “Draft” Its the diagonal line in the Switches column.

There is “Shy” button to hide layers that you aren’t currently using. You pick the layers you want to shy and then toggle the master shy switch, it’s the one that has a little face and nose peeking over a wall. So check to see if that’s pressed and if it is toggle it to the up state.

Those tools don’t work in the composition, but the individual layers. Double click a layer to open it up in it’s layer window. Click the tool you would like to use now and apply it in the layer window.

What I’d like to know is, in After Effects, how can I start off with a blank screen and then slowly reveal the circle layer, for example, if I wanted to show dots appearing on the screen going clockwise etc?
Use the Effect -> Transition -> Radial Wipe. Set the transition completion to 100% and change the Wipe to Conterclockwise. Now just animate from 100% to 0%
I suspect it’s something to do with using animated masks, but try as I might I cant think of a way to animate the mask so that it would work the way I want it to. How do you slowly “reveal” a complicated layer shape like say a long, twisted piece of string?
For a long twisted piece of string, I would probably use Effect -> Generate -> Stroke and create or copy the mask path onto the layer and choose for that mask for the path and then change the paint style to “Reveal Original Image”. Then just animate the End point of the stroke.
