It depends – there’s no “simple” answer here.
Very little on the Internet truly streams, but rather, progressively streams. The youtube setting is ‘good enough’ for vimeo, youtube, blip.tv etc.
Could they be better settings? Yes – it’s a tradeoff of size of upload against quality (to a degree.) Most of those sites will (possibly) recompress your media and will certainly do so for downconversions.
Hosting it privately, again, mostly likely progressive streaming, is optimized when you make assumptions about your clients connection. Your encodes should be about .5-1mb/s for SD, 2-4 for 720 mb/s , and 3-8 mb/s for 1080.
But Compressor is where it’s at – not QuickTime exports.

Type Youtube in the search box of the presets and use that.

You might want to try Compressor repair – if this doesn’t work, there are other workarounds.

Yes, there are many people that have been doing this for years and years – even with Xpress DV; Is there a specific concern/need that you don’t think that MC in some way performs?

There are several things possibly going on here that I can think of.
For years there’s been a struggle with the gamma values on the mac – Apple has picked 1.8 (the same as broadcast tv) where PCs are 2.2. And QuickTime/fcp are caught in the middle.
Your video card may not be handling the video correctly – what version of OSX are you using? 10.6.8? FCP 7.0.3?
Your system may be calibrated incorrectly.At the end of the day, if you shoot it, edit it and it outputs fine, it may not be worth tracking down.

There’s another zero cost solution for cross platform file copying.
It works out of the box with Win7 and 10.6.5 (or later.) – it’s called ExFAT and you’ll find it if you reformat the drive in disk utility.
Works great with 4gb+ files; only FCPX doesn’t like it for a storage drive.
