I cut the thing in a Prorez timeline and I’ve attempted to export it in various 10 bit codecs including Uncompressed 4:2:2 10bit and Blackmagic 10bit.

Which version of Final Cut are you using? You should be opening the Log and Transfer tool, or File->Import Panasonic P2 depending on your FCP version. Log and Capture is for tapes, so of course its expecting you to connect a deck if you use that particular tool.
