You can grab ShowIEL, a free program that lets you load up any library and look at the emitters in them. That’s the best way to try out all the other effects.

The main difference between the 3.0 demo and full version is that you get about 1400 more emitters with the full version, and you don’t get a watermark in your renders.
I use it with Vegas sometimes, there’s a tutorial on using the two together here.

“Use emitter’s angle and range” just creates new Emitter Range and Emitter Angle graphs for the particle type, which won’t help you in this case. Align to Motion should do what you’re looking for, you can also change the number in the box beside it to rotate the particle in the right initial direction. Tt really shows best when you have a high Motion Randomness setting.

If you animate the Number graph down to 0, that would stop new particles from being created. Though if they are moving, it won’t stop them in their place.

The only grass type emitters I can think of are the Meadows emitters from a few years back that you can get here.
The wind effect in those are done by animating the Spin graph I think. Right now a force would blow a particle away entirely. Your idea would make for an interesting feature though.

In the Background Image options, make sure that the Hold Last Frame box is checked. If the box beside that is set to 0, it’ll hold forever, but you can change that as you need.

Create Non-Intense Alpha was a feature that appeared for the first time in version 3 of pI, and since SE is based on 2 it doesn’t have that feature. The only way to check it out would be in the version 3 demo.
