Well, ultimately it seems installing iTunes (and thus QT 7.0.3) had no ill effects on either After Effects 6.5.1 or my other software which involves Quicktime (i.e. 3DStudio Max 6). Specifically I had no sound issues in AE (importing QT files with sound, exporting with sound). Thanks for all your support everyone.

Thanks to you both! I’ll make the upgrade to QT7 and report back if any problems occur. Much obliged.
