If at all possible, you should Always stay with what you started with till the end. If you shoot i, edit i, export to mpeg2 for DVD or Bluray i. Grfx work fine w/ interlaced footage, what do thing the rest of the planet does???
If you shoot P, edit P, export to mpeg2 for DVD or Bluray P, as DVD players and TV’s can display Progressive material just fine.
If you have interlaced, you would Deinterlace (the finished edit) when compressing for web or computer screen playback.

Convert to Quicktime using the Prores codec and you’ll have a much better time of things….

Your 1080i clips, are they progressive? if not, stay interlaced the whole time until compressing for web.
Export out of FCP using “Current Settings” take that into AE.
Render out of AE using the same specs as the sequence. Don’t jump to a 3rd codec.Chris Tompkins

If you shot interlaced and edited interlaced, create a interlaced SD DVD and Bluray.
DON’T deinterlace for DVD. You’re losing res and quality.
Export to AME, select mpeg2 DVD, upper fields to match the 1080i.

I suppose ya, you could shoot 1080 and drop it in a 720 sequence and gain some there.

Sorry, I missed the point that they were already wearing a lav for the house audio. I have had people where mine in addition to the house as well b/4.
Ideally you want to plug into house sound and get a clean feed from that. Not always possible I know. More dialog up front I guess.

Not knowing all the details and logistics with this location and client all I can do is say what we would/do do:
Wireless Lav on the speaker, If there are 2 presenters, 2 wireless mics. If they change speakers, hand over the mics.
Clean audio into your camera.
With slides, you ride the iris. You expose for the speaker, follow them around, when they refer to the slide, pan over, iris down.
