It sounds like what you are doing is pretty simple, actually. Just open the tracking panel and track your speaker. Apply it to a null, then create a solid with your mask on it and parent it to the null. Use the solid as the track matte for your footage. Ok, so maybe that isn’t as simple as I thought, but it’s really not that complicated. If you don’t know how to track or parent or use track mattes, just google it, you should find a bunch of tutorials. Probably a bunch on this site.

If you’re shooting against the sky, it shouldn’t be too hard to mask out. It depends on how much the strap thing (I don’t know what to call it) is flapping around. At worst, it would take about 30 seconds to a minute per frame of just rotoscoping I think (less or more depending on the skill of the person doing it). Then you may have to spend some more time replacing the keyed element, depending on the complexity of the BG. If youre using a long lens and the bird is pretty high, I think it would not be that difficult.
Someone else would have to comment on cost of hiring some, I don’t really have that kind of knowledge.
An alternative would be stock footage. If you can find a good shot, it might save you a lot of time.

If you have auto-save enabled in your AE preferences, there should be a folder where you saved the project with previous auto saved versions in it.

I, personally have never done anything like that, but if you double or triple the comp’s frame rate, then just play back every 2nd or 3rd frame, it should smooth out your null path.

0 Aperture is actually infinite DOF, so with that set to 0 or your DOF turned off, everything should be in focus. There does actually appear to be a minimum focus distance, mine was around 275 pixels, so as long as your footage isn’t closer than that, you should be able to get it into focus regardless of your settings. If you can’t, then it simply means your footage isn’t high enough res (at least, I can’t think of anything else).

I did it with a shape layer and it worked fine, although generally I don’t like to use them (I don’t really know why, I just don’t).
Still though, I’d like to know why solids do that. Maybe I submit a bug to Adobe if nobody has an answer.

If you are zooming into a picture or footage, the resolution of your source could be the reason it’s not clear. If that’s not your problem, pull the camera back and zoom in.

3D camera tracker seems like exactly what you should use. The one that is build into After Effects does a pretty decent job. Shooting your product on a Green Screen turntable like Dave suggested. If you could also cover the turntable with some green cloth, put some track points on it and shoot wide enough so you can see the turntable, your 3d tracker would love you, just key out the BG, but not the turntable when you track it or you’ll confuse your tracker with stationary points.

EDIT: I posted that then I reread your post and I think I misunderstood you. You will need to press that button though. Try changing the transfer mode to Screen. You might have to bring your other video into after effects and create this on top of it. Also you might try luma key or keylight on a precomp of your effect. Plexus might also have an ‘on transparency’ button (I’ve never used Plexus).
Just some ideas, I hope one of them works.
