Audition will work very well. You can eliminate each noise by capturing the pattern and eliminating that particular noise from the track. You will be tempted to overdo (that’s how amazingly it will remove noise) but don’t, could make it sound tinny or hollow.

Dumb question but are they physically locked? Easy to slide the lock while inserting in the adapter.

That is good. I mostly use only RAID 0 (for speed) and keep an HD elsewhere for safety because the studio is in my basement.

PPro doesn’t do anything to your master files, as far as I know. It only reads it.

I always make 3 (three) copies of my originals. I don’t want to take chances. Anything could happen to your drive/disc. Not advisable to have just one instance of your original. When you had the tape you had the tape. When your originals are in files you don’t have a tape to go back to, if you need to.

What version of CS3 do you have? You need 3.2 to be able to import mp4.

Obviously if you set it up and walk away it works, so there is your remedy 🙂
Seriously, this is what you should do (which it seems you are doing):
After editing (no need to render anything) ADOBE DYNAMIC LINK> Send to Encore. Encore will open up and ask for a name to save. Give a name and location and select Blu-ray or DVD, NTSC or PAL and click OK. Will prepare encode settings. Wait for it to create a timeline with your PPro project.
Then in the Project window click on the TIMELINE and in the PROPERTIES window make sure you give an END action such as STOP.
Click on an empty area in Project window and in PROPERTIES window ignore Override, and in TITLE BUTTON> Specify Link> select your timeline sequence.
Now BUILD> Check project> there should be no errors. (Don’t build until you correct errors. Your DVD may not be playable).
Make sure FORMAT is what you want (Blu-ray/DVD) and select OUTPUT as Disc, DVD Folder, or Image.
In Properties window give a Disc Name.
Now click BUILD and WAIT………. a long time… depending on how big your project is and how fast your machine is. If you think it will help, walk away. Should be done when you are back.
