Look at those two statements. Do you see what the problem is?
This has nothing to do with the tapes. You cannot convert HDV to DVCPro HD unless you capture from a deck using HDMI or SDI with a capture card.
You need to set FCP to capture either HDV or use the HDV to ProRes setup.

It works for me. We’ve used the Share button to make Blu Ray screeners encoded with h264. It works, it’s convenient and the disks look great in playback.
A client used one of our screeners to project their film to troops in Guantanamo last month. They were blown away by the quality of the disk, we were blown away by the ease of creating it.

Do you mean interlacing?
That’s not a “problem”, that’s the nature of standard definition video. You might try deinterlacing your footage, but that will make your video less sharp.

I’m quite surprised that you got Color to launch with dual graphics cards. That must be new. 🙂

This is where it becomes a matter of personal taste. I’m a dual monitor guy. I find a single 30″ to be restrictive, even though it’s clearly a lot of space. I’d rather have a pair of 24″ or larger, but then there are people who find dual monitors don’t work for them.

You need to buy Glue Tools if you want to edit directly from the DPX in FCP or even in QT.
If you have an AJA card, you can use the DPX utility that came with it to convert the DPX into a QT.

Color will not launch with 2 graphics cards installed.
Most, well all, of the better graphics cards support dual displays. Nvidia’s Geforce cards are lower end cards for home computing & light gaming.
Color works best with ATI cards. Either get an Nvidia Quadro or an ATI Radon HD series card.
