Screen recording software usually uses variable framerate.
Premiere cannot handle that.
Convert with https://handbrake.fr/ to Constant Framerate before bringing it into Premiere.

Use Previews is only usefull when preview codec is the same as output codec, otherwise low quality files will be used.
E.g. if your preview codec is I frame only mpeg you dont want to use the Preview option.

Regular SD should not be a problem.
Post screenshot of file in Mediainfo and post outcome here on forum in treeview or better yet upload small clip for testing.

That is correct: the H.264 list has been cleaned out as there were too many presets.
On windows its pain to scroll through them.

Unless setup 5.1 will always go to its own track.
For the rest make sure the tracks are source patched
