Have you tried applying the Type On behavior to the text? If it’s the same length as the sequence text, then it seems that should get you what you want.

Then you’ll see a drop down of the other selection tools available for you. Third from the bottom is the control points tool. Choose that, and the control points will be available for you to adjust.

Well, the thing about the Snap Alignment to Motion behavior is that it only works while the layer is in motion. There are two ways to fix this.
1) Shorten the length of the Snap Alignment to match the length of the Motion Path behavior. Go to the last frame of the animation. Note the Rotation value in the properties of your plane layer. Advance one frame so that neither behavior applies. Type in that same value for as the base value for the rotation. While in Snap to Motion mode, the layer will ignore the rotation of the layer in favor of following the motion path. Once that animation is finished, it’ll revert to it’s base rotation, which you will have matched to the end rotation of the motion path.
2) This is the easier way in my opinion since you built your plane from a text object. Delete your Motion Path and Snap Alignment behaviors or turn them off. Select your text layer and go to the Layout section of your Text tab. Choose Path for your Layout method. Under Path Options, choose Geometry for your path shape if you built your Motion path with the bezier tool. If you built it manually, then choose Open Spline from the Path Shape menu and rebuild your “flight path”. Then just animate the Path offset and the Text will naturally align to the path you created.

I’d say no since the logo is a PNG. Is there some problem with coloring it that way?

I have Photoshop so the first thing I did was open it there. If you also have photoshop, you can always check images before using them. I deal a lot with print gfx artists who tend to always work in CMYK, so I’m used to adjusting the images I use.

Your image is Indexed Color. That’s not compatible with Motion. You’re liable to get all kinds of issues and errors. Here’s an RGB version. See if this works for you.

To answer your question about why it’s doing what it’s doing…
The Grow/Shrink behavior is one of a few behaviors where the layer reverts to it’s previous settings after the end of the behavior has been reached. Therefore, no matter how short you want the grow/shrink to last, the behavior needs to be applied until the end of the layer (the IN can actually be trimmed though). To adjust the timing of the grow/shrink, you need to adjust the End Offset slider. The way I do it is by opening the keyframe editor (cmd+8) so I can see the animation curve, then adjust the slider until the end of the grow/shrink lines up with where I want the behavior to end.
That said, I agree with Stephen about using the Move behavior. The only reason NOT to use it instead of the Grow/Shrink would be if you need to scale the image from extremely small to normal or large size. The “natural scale” setting on the grow/shrink makes this ideal.

Can you post the image you’re trying to use? I can see nothing overtly wrong that you’re doing. Although I find it strange that your 3rd particle says none in the source as if you added it as a particle and then deleted it from the Media tab.
The only thing I can think of is that the image is of a mode that is incompatible with Motion like Grayscale, or Index or something like that. All images need to be RGB, but if that’s the case, I’m not sure why it’s not accepting the image source in the well.

Can you explain how you’re trying to get it to work? If the shape you’re using to constrain the emitter is an image, then the emitter shape needs to be set to Image. If you have it set to Geometry, then the image won’t be allowed in the well. Geometry is for shapes only (like those made with the bezier tool). If you DO have it set to Image, could you take me through a step by step to see if there’s anything you’re missing (though that’s unlikely).
