maybe 2 smaller screens with rearprojection could work better than one huge front projection screen, but anyway with frontprojection and ambientlight around, pictures always will look washed out. The reason is simply because the screen will not only reflect projectors light also the ambient light.
Working in such facilities, without the right budget (LED 4/5mm) is always a compromise but

since a year for fixed installation in bright areas, we are now using “supernova screens” very successfully. And last year they came out with a special optical frontprojection model https://www.supernovascreen.com/Supernovascreen/The%20screen/Screen%20models/Supernova%20Infinity.aspx
The testing results were very impressive and the best I´ve ever seen so far. The ambientlight (even sun) is filtered from this optical screen so well that you get contrasty clear pictures. No hotspot and sufficient viewing angle.
The only disadvantage instead of a standard screen is price (and the weight), but it is still a lot of cheaper than a LED-wall. but maybe you can get in touch with the company if and who will rent.

    good luck

please do the following: take a signal, like a colorbar from your housesync or your camera or whatever. Buy or rent 200 feet cable by an accredited dealer, not on e-bay. Connect the signal directly to a waveformmonitor and a vectorscope, than do the same with 200feet in between, the difference is negligible and for delivering to a projector not worth to talk about. Another visual test would be a crosscolor sensitive graphic, check it out…

no more need to be nervous…

While we are doing a lot of Presentations with wingsplatinum, a really powerful solution, I want just to add a more simple solution, if no other outputs like dmx, serial controls or switches are needed.
We were very successfull with an laptop and premiere pro 2, directly playing from the timeline. Output is the 2nd display (overlay, quadro FXnvidia 1500M graphiccard) Video is a progressive 1280×720 Cineform video. Simple for start/ stop, great quality and reducing all windows in ppro2 (just timeline and Prvwindow open) works very safe. (Laptop is an older mobile HP workstation with Centrino Duo and 2gig RAM)

Tricaster is made exactly for your application (only composite and Y/C connectivity, but good enough for straeming). Easy and quick Setup, and should work flawlessly.

In many cases we are using tricasters big brother VT4 for streaming, even for broadcasting with good experience.

Your mixer is capable for Y/C as your Cameras, this would increase your picturequality noticeable.
Instead using one BNC cable for composite you need two BNC(75 Ohm)cables, with an adapter from BNC to YC for each camera. (A multicore with 2x RG 59 inside) BTW: If you don

If the client is paying for this high Quality, I would use an outboard chyron generator with an operator included.
