Track-at-Once adds tracks to the disc one at a time. It automatically adds a 2 second pause between tracks. You can come back later and add more tracks. When you are finished, you must manually close the disc so that it can be read by a CD player.
Disc at Once burns all of the tracks exactly has laid out on the timeline and then closes the disc so that no more tracks can be added and it’s ready for playback on a CD player. In this mode you manually control the track gaps through event placement.

Marking the tracks yourself with the ‘N’ key and use Disc-at-once. You then control the gap with your event placement.
