Shatter effect: Letters floating off a page
But somehow the letters always break from left to right not randomly as in the video clip.

I don’t know the tutorial but the creator does explain in the comments, he used a custom shatter perfect.
I take that to mean, that he created a layer with his text shapes on it, then added a noisy gradient to those shapes, so that they didn’t shatter in exact left to right order.
