I’m taping 8- (6) camera HD shoots and trying to come up with the best post workflow.

Will not have enough room to edited in Uncompressed HD but what would be best – 10 SD uncompressed, DVCPro50, or DVCPro HD,

Recorded in 1080i and captured with a Kona 3 or LHe card.

DVCPro HD and then downconvert it in realtime to DigiBeta. Just protect your graphics for the 4:3 center cut.

That will give you the best quality from the HDCAM material if you’re not going to cut in 10bit HD.

I agree – DVCProHD for your compression, and use the JH-3 HD Cam VTR as your player into your FCP AJA system, set to 23PD, which will ensure that you have the 2:3 pulldown so you can output with no aggrivation.
