Hi,
If our video will be shown on a projector at a trade show, should the pixel aspect ratio be square or NTSC

what format is your original project and what format do they intend to project?
Projectors come in all shapes and sizes. Some are computer resolutions only. Some are SD only. Some can handle everything to HD and beyond.
What you need to know is the exact specs of what they will be projecting at the show.
