    I want to tear my video like a piece of paper. I thought to just use masks but it’s a little to jarring. Any other ideas. Also would like my video to bounce to a beat.

    You could try using a page turn transition and then masking that so that it looks like only half of the video is being turned/ripped off. I don’t know exactly how that would look, but you could try.
    About getting your video to react to the music, Sound Keys is a plugin that does that for you. Otherwise you may have to keyframe it by hand.

    An alternative to masks is a matte. You can create or (scan) a torn paper Photoshop file then use that as a track matte. Track mattes can be animated as well.

    If you just want to use amplitude (volume) to drive animation you could use the Keyframe Assistant > Convert Audio to Keyframes which will create a new Null Object named Audio Amplitude that has keyframes for each channel as well as both channels. Then you can either parent or use expression controls to drive the animation using these values.
