    I have an interview shoot to edit,
    during the interview it looks like the sun comes out from behind a cloud because the interviewees face becomes increasingly over exposed,
    tried keyframing the 3 way CC mid/highlights but doesn’t work so well,
    also tried dropping a copy on top in timeline- compositing as Difference and increasing clip opacity as it gets brighter, works a little better but still not quite there,
    any suggestions?

    Try this:

    Rather than keyframing the CC, use the blade tool to cut the interview into several sections of distinct difference in exposure. CC each section separately to taste, then place cross-dissolves on the edit points and make the transition length several seconds or more until the cross fade is not perceptible. This will probably look smoother than keyframing and be more easily tweaked. You can also slide the cut points as needed after the fact.

    Nothing wrong with keyframing. To do better than the 3 Way CC you will get a better result keyframing in Color.

    Either way if the exposure blows out detail, then that is lost info that can be made to look better. The curve control in the primary room can help with highlight recovery.
