I just setup a colleague on a brand new 12core. You can’t install Snow Leopard on these new machines without a lot of craziness, but you can boot Snow Leopard from already built systems. I’d recommend cloning your current system on another drive and shove it in your new MacPro and work from there.

It’s not the best, but I’d wait on Lion for a while.

Lion seemed ok until the .1 update. Then things just started crashing more. And since the proApps codec update things have been really getting odd and more crashig. Lion doesn’t seem to release memory very well. I can’t run AE and FCP together. I’ve had FCP giving memory errors and a few times I’ve quit every app and the available memory was pretty much nil. On leopard if I quit everything there would be 5.6 gigs available. I’d go months without rebooting. I’m lucky to go all day now. It’s like OS9. If you want to keep updating your system like I do, then I’m not sure how long FCP is going to be feasible.
