How to Change Number of “Open Recent Projects” List I can see?
How do I change the number of recent projects to open? I am using FCP 7.0.3. IT only shows one and it’s not necessarily my most recently opened project.

You can’t. Go to FCP feedback and be one of the many who have asked for more.
