    Is there a way to select the frame that will be used as the thumbnail/icon for the exported video

    No. That thumbnail is actually a function of the player program, not the video file. You will see that the same file can have a different Quicktime thumbnail than a Windows Media thumbnail. Depending on the use of the final video, YouTube lets you choose between three thumbnails taken from different parts of the video. On Vimeo you can upload a separate still image file to be used as a thumbnail.

    Thank you for the information. I would have thought it easy to have the file embed a code for a frame you could select or modify that would be recognised by all media players as a standard. oh well maybe one day.
