I have three options (I think) of connecting my dv deck to the computer. I am presently using RCA to USB. I also have S-video and dv outputs. Would one of them deliver better quality than the RCA?

Firewire is going to give you the best results.

Thanks, Tom, but unfortunately I do not have a FW port from the dv tape deck. Just RCA, S-video or dv outputs.

Step two shows a picture of a four pin firewire port. It is likely that this is the port marked DV on your camera. Ignore the stuff about iMovie further down.

In FCP make your easy set-up DV NTSC. This will set things so that FCP is looking to the firewire port for a deck or camera.

You can buy six pin to four pin cables online. Just google it.
