I’m converting videos I’ve taken with my Canon T2i, and no matter what file type or preset I choose.. the videos end up looking like their contrast has gone down.

I mean, I’m okay with lower quality, but they just end up looking totally different than what I shot.

    Why does this happen?

My first guess is that your computer monitor needs to be calibrated, but you do not say what your comparison is. How do you know what the footage, as shot, looks like? In any event, Vegas can adjust the contrast if that is the only problem.

It would help if you told us what you were converting your footage to and why. Personally, the only format I would convert Canon T2i footage to is Sony MXF, XDCAM EX, or CineForm.
