Is there a way to union two masks together? Not just so I can add them both to one layer, but say I want to apply a stroke that surrounds both masks, but not where they overlap.

No. You can take the masks over to Illustrator, and combine them there, then bring them back.

So there won’t be an easy way to animate that, then.

Is there an auto-trace? Because then I could apply the masks to a solid, pre-compose the layer, and then auto-trace that. Which I think would acheive what I was hoping for.

There is an auto trace, and it does create masks, so it looks like that will be a good approach.
