I would like to create a stroke along a spline, but have the color start and end in different colors.

Trapcode Red Giant 3D stroke comes to mind, but does not have the color functionality.

    Any ideas?

If it doesn’t cross back over itself, you might be able to use it as a lumma matte over a solid with like a 4-color gradient effect or something.

Use a Shape Layer to create the spline/path. Ensure to switch off the Fill property for the Shape Layer. Apply the Gradient Stroke Shape Operator.

The Gradient Stroke’s start and end points can be observed in the Comp Panel as a dashed line with two dots on either end. Move the start and end points accordingly. Set the gradient’s start and end color to taste.
