Captions bug makes them disappear
Why does this happen? ;(
I’m on a 13″ Macbook Pro, Mojave 10.14.4 and my Premiere is 14.0.1.

Because Premiere’s built in captions editor is simply not good. Whenever possible do all caption editing in an outside program like Rev.com’s online editor and then only import the finished srt file into Premiere.
