Analog media converstion
I am looking to digitize some VHS and Hi8 tapes to be able to edit with in FCP.
I’ve done some research and come across this product:
Canopus ADVC-110
I was wondering if I am overdoing it by going with this option or if this is pretty much what I need.

That will work fine. if your cameras or decks have a firewire output, that’s even simpler to plug-and-play. But this converter is fine. if you have the option to take s-video over composite video, use S-video for slightly better quality in the conversion.
