anyone know how to add a bit of ‘noise’ the the curve of an animation to give it a more organic/random look?

Well, I am not sure what you like to achieve –
    you could try a Vibrate-Tag.
If you want to enable position you might have
to put the vibrate-tag on a null and make the
object a child of the null.
For scale and rotation I believe you can put
the vibrate tag direct on the object.

    Cheers
